Another query:

add the new ADM template in that GPO) the ADM file will be copied to
the relavent location under Policies\<GUID>\.

That makes sense.

However, what if I update the ADM files in the
%windir%\system32\GroupPolicy location? Will the new copies of the
ADM file be copied over to the existing Policies\<GUID>\. location
where the GPOs are stored? It would seem likely that they would have
to be at least if / when any setting exposed in the new ADM files were
used to make a change to a GP setting?

Or, do I need to do anything manually to keep them in line?

Also, if I update the ADM files on the DC, should I then copy those
files over from \\DC\%windir%\system32\GroupPolicy to my own
workstation and put them over the top of the existing ones in the
C:\Windows\Inf location?

The ADMs are not critical to the functioning of the GPOs, they're there (AIUI) to facilitate remote GPO management.

I'd expect the GPMC and other management tools to replace the ADMs in the GPO folders any time the GPOs are amended. An existing GPO with an out of date ADM probably won't get the new ADM until it's edited.
