You do it when you run the SBS setup portion of the SBS install. Handy Andy
has screen snapshots of the process here:

I'm getting ready today to reinstall SBS. Just reread some posts on
backup and initial install and see that I really should put the Exchange
and SQL databases on their own partition. I read through Harry
Brelsford's Advance SBS Admin and saw how to move the log files, but how
do I move/setup so that the databases go to their own partition?
