Since you're not booting from the RAID, do you need to install a driver for that controller? Grab a copy of the controller drivers on a floppy or whatever. As you're booting from the DVD, watch for the prompt to press F6 to install drivers.

However, the problem is that it seems to be the RAID array that is not being
found rather than the DVD. I can boot from the DVD no problem and get through
the setup until it says press enter to install then it says there is no disk.
If i try the same thing from within Windows XP as currently installed, I get
the bit where the relevant files are copied to the hard-disk then I get the
0x0000007b error on reboot... hmmm...
It is odd but i can definitely rule out the DVD.

configuration thing with the server not being configured to boot from the
DVD drive. When the server starts up, do you get a prompt like "press F12
for boot menu?" Or can you set the DVD drive as first in the boot order in
the BIOS?
You might start by trying to boot that DVD in a different server or
workstation. That could prevent you from spending time troubleshooting the
server when the problem is the disk.
