Moving the mailboxes to a new server name is not terribly satisfactory,
IMHO, and doesn't solve the public folders. And yes, once the FSMO roles are
moved to SBS the 2000 box can stay there.
It all really depends what the OP is trying to accomplish. And how much pain
he's willing to put up with to get there. Personally, I hate pain, and I
hate pain to my users even more. I Swing It! whenever possible.

You can join the SBS machine to your existing domain for long enough to
migrate the roles and the AD. But that won't get your Exchange, nor
anything else. The solutions from MS are frankly lame. I'd strongly
suggest www.sbsmigration.com - swing is definitely the way to go.
