SBS 2003 Stalling Frequently

My name is Andrew, and I am experiencing the same stalling of SBS 2003
Premium SP1. It is running on a Dell PE 800 SC with 4 GB (3.5 usable of
course) of memory, single P4 2.8 Ghz processor, and a RAID 5 array. This
client has roughly 20 users and heavily uses Exchange and Sharepoint. Their
Exchange database is hovering around 23 GB (I have the 75 GB switch set to 60
GB usable) and their Sharepoint is hovering around 1 GB and growing daily.
ISA 2004 is installed and configured. Symantec Enterprise Edition with
filtering for Exchange and System Center Console are running. The SBS backup
is being used, not Veritas/Symantec. QuickBooks Premier QBDBMgr is running
as well hosting multi-user access to the QB file.
What I am experiencing is that Exchange and SQL (Sharepoint) seem to suck up
all the memory in usage. I some times find SQL using upwards of 1 GB of
memory and Store using upwards of 750 MB of memory. I have a script set to
stop/restart these two services to re-allocate memory so that I don't keep
getting the Allocated Memory error, otherwise the system will spin out of
control with errors:

Unable to open LDAP session on directory 'LGOSBS' using port number 389.
Directory returned the LDAP error:[0x1] Operations Error.
These errors fill up the Application and System log and bring the server to
a halt. You can see the CTRL+ALT+DEL screen but cannot login, the system
tells you that there are not enough resources to login; then we have to do a
hard reboot.
There is no particular time that this occurs during the day or week, but
occurs almost daily if my stop/restart script doesn't run.
The SBS Backup is working so I don't think it is related to VSS, though I
did not install KB870973.
I will try running the Memory Pool Monitor, any help you could give me would
be great though.
