Sounds like you are having user profile problems, and I'll bet you see app
log errors on the clients.Download & install the User Profile Hive Cleanup
utility from MS on all your workstations.

The same is true for items
on the desktop. Please help we are running out of space.

Running out of space where? You should use Folder Redirection via group
policy so that My Documents is not part of the user's profile path - but is
directed to their home directory or wherever you choose. You can do the same
for Desktop, but I prefer to instruct users *not* to save items on the
desktop (shortcuts only). I also like using roaming profiles, but that's not
necessary.
