Perhaps the easiest and least system overhead method to have this delivered
to another single user is to just add the email address to the selected
user. I typically add postmaster@ and abuse@ to the administrator@ user
accounts.

Otherwise, setup a distribution group and add members.

Yes, but they don't have to be at @[IP address], it's OK for them to be
@your.mail.domain. That's easier, as you just add them as dummy users,
logon disabled, with mail redirected to the network admin.

The practice of sending email to an IP address rather than a hostname
is an old one, now deprecated, as they say, and is not required by
current RFCs. It was used inside networks that did not use dynamic DNS
i.e. the workstations were not addressable by name. All *nix
workstations run SMTP servers, which is not the case with Windows.

If you run a web server accessible to the public, you should also read
mail to webmaster@xxxxxxxxxxxxxxx, not that many people do.
