This is an expensive route but the only one that I've seen so far. There are
single port KVM's that work over IP (KVM/IP) that plug into the
monitor/mouse/keyboard ports from a tiny box that has a ether port on it. You
can then plug a cross-over patch cable into it and a laptop and control that
machine from your laptop. They run around $300 though.

On a non-SBS XP Pro you would first need to enable remote desktop. Do this
while the user still has a screen/KB.

XP Home or 2K you can install and configure VNC, leave the service set to
manual start, as long as you can get network connectivity to the PC this can
be used to start the service and take control.

I guess I'm not being clear so let me give an example.

I go to a clients that has a blown monitor. S/He doesn't have an extra
monitor and I don't carry one with me. I want to be able to connect my
laptop
to the clients PC and control it with my laptop like Remote Desktop or
GoToMyPC. A KVM doesn't allow one PC to control the other unless they are
connected via a cable and software.
