Hardware recommendation

Hi all:
I am a CRM pre-sales guy, not a hardware guy, but I have been asked to help
spec out an SBS machine for a customer and this is not something I have done
a lot of. These guys have 30 people, and think they might someday get to 60.
The users are spread across the world and different time zones so they
estimate at most they will have 10 concurrent users at any time. They are
going to be using the server primarily for email and might go to MSCRM at
some point in the future at which time we might have to tack on another
server.
I was wondering about RAID, do you folks typically recommend they go with a
RAID array for the OS, and then another RAID array for the data? Is SCSI
necessary or will SATA work? What about backup, are most people using USB
drives these days as opposed to tape?
For the core components I was thinking something like:
Pentium P4 D (Dual Core) or
Single Xeon processor with slot for adding 2nd in the future
4 GB RAM expandable in the future
2 100GB Drives for the OS in a RAID array
2 300GB Drives for Data in another raid array
Any and all help is greatly appreciated.
