Interesting idea, SG!
Does it cause any 'issues' if the SBS box is set up with *DUAL* NICs eg, is
does DUAL NAT'ing then occur?
And does that then mean that wireless visitors then know the WPA key and
could, in theory, come back and re-establish an internet (if not intranet)
connection with the key - or is there a way to handle this issue?

The easiest way is to place a router between SBS and the internet, I often
suggest a four port+Wireless. 1 port for the server, leaves three physical
ports, 1 goes to the boardroom to a wallplate marked 'Internet' and the
others can be patched to a particular area as necessary. Visitors with
wireless need to advise of their MAC address and are supplied the 'key'
upon request.
