I am running SBS 2003 with XP Pro clients and use MS Outlook 2003.
The time stamp on an e-mail is different (usually 1 hr out) for some
of my users than the time it was sent/received! This effects
different users in different ways, some when receiving internal mails
and some when receiving external mails!
I have checked the Time Zone for each machine and are all setup the
same and all relevant clients show the correct date/time on the
Taskbar.
Any help on this would be appreciated.

The time zone and/or daylight savings time settings in Outlook are probably
wrong. Tools, options, calendar options.
