Adding 2 new HD to SBS, partition question

I guess I should start with the basics, how do I install the new drives?
I'll power down the Dell PowerEdge server and slide the two new SCSI drives
into place. When I power the server back on will I have a chance to
allocate where I want the new drives assigned? My system partition only has
2 GB free, while that may be enough I would like to allocate a small portion
of one of the two new 36GB drives to that partition. I would then like to
assign the remaining space to my existing data partition.
I will obviously have a good back-up (or two) just in case something goes
ka-boom.
