Yes, this can be done.
Two drives form the RAID1 array and the 3rd is the target for the backup.
However, if the 3rd drive is simply another hard drive inside the server,
you really don't have much of a backup scheme in case of fire, theft,
electrical surge or attack by a pack of ravinous aardvarks. It would be
better to have at least 2 additional drives (preferrably identical capacity
3rd and 4th drives) and put these in Firewire or USB external cases so they
can be rotated daily with one always being stored offsite (or at least in
another part of the building far away from the server).
You need to establish the software RAID1 configuration in Disk Management
(rt. click My Computer | Manage | Disk Management), then run the SBS Backup
Wizard (Server Management | Backup | Configure Backup) and select the USB or
Firewire drive(s) as the target for the backup.
