Like Cris pointed out, moving inetpub would take a
reinstall of IIS. Please refer to the following article:

majority of SBS components are heavily dependant on IIS and a reinstall of
IIS would mean that you break your companyweb, remote web workplace,
monitoring and other assorted websites. To be frank, freeing up space should
never be a reason for reinstalling IIS, you might just end up making things
worser. As an alternative you can move individual data components using the
following whitepaper:
