Jim,
Thanks for the help. This is our exact situation except we aren't using
Veritas. I have an external drive to move the copies to and now want to
disable the shadow copying to the primary server drive. By disabling the
copying of the 23 share shadows to the server drive (after first creating
the new copies externally), will this automatically delete all of the old
data on the SBS drive? If not, can I just manually delete it?

Do you have volume shadow copy enabled on the disk that has the large
system volume informaiton area? That is where we keep the delta
informaiton for the disk if VSC is enabled. Also, content indexing is
stored there as well. Also, do you have Veritas Backup Exec? They use
VSC
to perform backups and it has been reported that failed backups will
result
in some of the VSC data not being removed when a backup fails.
