Hi Jody,
You may also change the folder redirection in Server Management under Users.
There you will find an option to Configure My Documents Redirection. I
strongly encourage you to locate your user files on the server and use
Offline Files for mobile users unless you have a backup plan for all your
workstations.

The home folder settings are stored in active Directory Users and
computers. In the users properties on the Profile tab.
