Sure. I'd have no problem doing that. Even if I set up another
admin-equivalent account, as Les suggests (which I would definitely do),
auditing won't do anyone any good if someone completely hoses a box. It's
their server, it's their data, and they can fire me at any time - I will
even work with them during a handover to someone else. However, if others
beside myself have any sort of admin access to a server, I'd want it
acknowleged that Stuff Can Go Wrong and it won't be my fault, even if I'm
happy to come in and fix it after.

Create an Admin account for them. As it is there server then
legally you have too. At the end of the day if they screw it up
you charge em shed loads to fix it and give them a massive slap on
the wrist whilst saying stoopid dog.
"Consulting Company X shall not be liable for damage done by people
who think they know what they're doing" yaddayaddayadda. And then
give them what they want.
