Confirmed with Andrew. I have the same setup as he.

SBS will work with more than 1 processor. I am setting up a newtwork
right now with a dell poweredge server with dual Xeon processors. In
fact they are Hyperthreaded processors so SBS sees this as 4
processors. If you go into Task Manager under Performance, how many
processors is it monitoring? I got some kind of processor warning when
doing the install as well, but I don't remember what it was about. Did
you use the server assistant CD from Dell to get SBS installed? When
you do this, it sets up all the drivers for SBS for hardware and such -
maybe once the SBS is installed and these drivers take effect, the
other processors are usable. I really don't remember anymore, but I can
at least tell you that SBS will use the 2 processors - and supports
Hyperthreading.
