Thanks for your update.

For current situation, we can isolate the issue on the antivirus software.
let us perform the following steps to see if it helps.

To install antivirus software on the Exchange server, the following folders
must be excluded from the application scan list in order to make Exchange
work properly.

1. Exchange databases (default location: Exchsrvr\Mdbdata)
2. Exchange MTA files (default location: Exchsrvr\Mtadata)
3. Exchange temporary files: Tmp.edb
4. Additional log files (default location: Exchsrvr\server_name .log)
5. Virtual server folder (default location: Exchsrvr\Mailroot)
6. Site Replication Service (SRS) files (default location:
Exchsrvr\Srsdata)
7. Internet Information Service (IIS) system files (
:\Winnt\System32\Inetsrv)
8. Working folder for message conversion .tmp files. (default location:
Exchsrvr\Mdbdata)

Then please test the issue to see if the issue has been resolved.

If the issue persists, I would like to suggest that you contact the
antivirus software vendor for support. They are more familiar with their
application than us. They may have released the related hotfix to resolve
the issue.

Please totally uninstall the Norton Corporate AV software from the server
and then restart the SBS server box, then please monitor the server to
see
if it helps.

It did help, but I don't quite know what to do next! Obviously we cant
run
the server without AV protection, but reinstalling it causes the issue to
reoccur. As it doesn't seem to cause any problems to the users this is the
option I have gone for ;)
