This is one instance I would advocate a two NIC setup:
Router with DHCP

SBS WAN Nic (192.168.1.2) and other unknown machines in 192.168.1.x
DMZ)

In the SBS Box, the second NIC (192.168.2.1) containing your trusted
clients.
You then allow the router DHCP to run, allowing public computers to
get the Internet settings of the router, without compromising your SBS
box. The other machines can access the SBS box, but only the WAN side
services (i.e, SMTP in, etc).
