Not to mention you affect the daily 6 a.m monitoring email.

Frank & Owen,
My small business company has not yet use email & Outlook to do daily
tasks, so if I'm going to un-install Exchange then I'll definetely
un-install Outlook as well.
You write "yet" - but even if that isn't relevant, don't uninstall anything...Frank said the same thing.
Just shut off the Exchange services on the server. Leave Outlook installed on the workstations - you don't have to *use* it just because it's there.
I'm more concern about SharePoint services, will it affected too if
the Exchange Server is removed? Because some of the employees is
still using company website (that's created automically by Win SBS
2003) to access some resources like JPEG, notes, shared personal
folders & Office 2003 files.
Perhaps that will more clear to express what I meant by "won't harm
Win SBS 2003 works"?
Don't uninstall anything. Just don't use what you don't want to use.
(That said, I strongly suggest you do some research and try using Exchange/Outlook - it's a very nice thing to have).

Possible but not advisable. Instead install and disable if you don't
want to use it but you will lose Outlook that way.
