RAID 0 or mirror drives which is better



Hello all
I have a Win 2K3 SBS server I am building I have 2 - 250 GB SATA drives.
Server will be running Exchange, File & Print, and a few network accounting
& tax apps.
Dell Poweredge 830 Pentium D @ 3.0 Ghz.
Is RAID 0, or mirrored drives the beter way to go
Any ideas are appreciated.
