Fool Proof Backup AND Restore

Im the "fool" who desires a simple fool proof backup restore senario.
Why do I need Back/Restore: Chances are, that it would be a harddisk that
fails, or maybe a power supply that then damages information on the disks.
For my needs I will assume that the hardware wont fail in the medium term.
But that I must plan for loss/damage of a harddisk.
Intitial Setup: For simplicity and ease of repair restoration I have 3
identical 75Gb drives. 1 of which is factory sealed and sits at the bottom
of the case in the event its needed. The other 2, 75gb drives= DriveC is the
OS and DriveE is the data folders, exchange, users, shares etc. There are
some data type files on C, fax as I recall, though Ive configured a copy to
E in any event. I also have a 4th BACKUP drive, which is 200Gb and sits on
the IDE rather than SATA channels (theroy being that Im less likely to get a
corruption on both IDE and SATA channels at the same time)
Brief: I dont know much about datafiles and AD etc. With this in mind I
would be more comfortable doing a COMPLETE backup, that is to say that
regardless of whether its the data drive or the OS drive that fails, I would
like to a COMPLETE restore in any event to avoid discrepencies.
Can I do a COMPLETE backup and RESTORE? Or will I always have to reinstall
SBS from the CD, apply the patches that were current (yikes) at the time and
then RESTORE.
Backup Regime: What method of BACKUP do I use, "Normal" "Incremental" should
I use SBS built-in utility or the standard OS util. Bearing in mind I want
to do an ENTIRE RESTORE if its possible.
Any help would be appreciated as despite my assertions in other posts I am
kinda becoming a SBS convert. Only Backup/Restore now stand in my way.
