Win2k Domain -> SBS2k3 Domain

Hi All,
Sorry if this seems like it's been covered before, have read ALL the
posts already but just wanted to get advice on the setup I have been
put in charge of and what I hope to achieve.
Currently have :-
Win2000 Server as PDC (no BDC) - domain as e.g. "DOMAIN"
Win2003 Server with SQL 2000
Win2003 Web Server
15 x WinXP workstations
We now also have a new server with SBS2003 that we want to take over
the aging Win2k server and bring with it the updated features and
managebility etc.
I have read the 2 main ways that I can see of doing this with one being
the MS Win/SBS2000 migration to SBS2003 paper

or with the stop at SBS2003 disc 1 setup and connect the SBS2003 to the
Win2000 domain and transfer the FSMO roles there.
What I would like to achieve is to obviousely have as little downtime
for the users as possible and little disruption so hopefully same
login/password.
Hopefully be able to change the domain name to something more current
(domain1.local) but that's not important.
Not break or anything the SQL or Web server during this time as both
are business critical, this is my biggest concern.
Any help or suggestions on best path to choose here is appreciated.
