Logging all Incoming & Outgoing messages in Exchange

Tech-Archive recommends: Fix windows errors by optimizing your registry

We need to find a way to log all Incoming and Outgoing messages through our
Exchange SMTP gateway.

My intention at the moment is to write somthing to log these into a database
using an Exchange Event Sink. Problem is I can't find much information
about how to do this anywhere.

Has anyone done anything like this before?
