The only reason this wouldn't work is that occasionally a machine won't work
with a particular RAID card--either a BIOS conflict or SBS itself won't like
the RAID drivers, but that's a trial-and-error issue. Of course you'll need
to be able to set the BIOS to boot off the RAID controller.

You can also use software RAID 1 built into SBS.

I wouldn't get rid of the additional IDE drives, though. I'd keep them and
use them as test drives. Say you want to test an update or new piece of
software on the server. You ghost the working image onto the single IDE
drive (turn off your email before you do this), boot from the IDE image,
then install/test or update/test. If everything works as you hope, then you
can boot off the RAID and install or update.

I personally don't have much experience in this area, but I think that
going this route might casue problems at boot time. Won't the OS be looking
for an IDE drive to boot off of, and not a RAID SATA drive? Please correct
me if I am wrong.
