If the allocation size for the volume containing the shadow copies is set to
16kb instead of the default 4kb, defragging does not destroy the shadow
copies. Actually from reading the documentation it's never been clear to me
if it's the shadow location or the shadowed location that needs 16kb. I set
both locations to 16kb when creating the partitions, and the shadow copies
remain intact after defragging.
