Did you have a chance to review those articles?
They provide exact advice how to achieve what you want, which is OU-level
separation complete with separate GALs etc. The reason why I mentioned
hosting is because logically that is what it is and because this thread will
be searched for in the future and the information is valid for both
scenarios.
