You can use whatever.foobar.com

Whatever.foobar.com, as long as that A record was created with the correct
public IP....

MX records have to point to A records. You can have multiple A records if
you wish, and they can all point at the same IP address.

You can use fluffykitty.foobar.com and it doesn't matter :)
