For what its worth, we have a Dell 2850 with same drives PERC 4 and RAID 5.
I have a total of 210 GB available and I split:
c: OS and application programs - 30GB
D: Data - 105 GB
E - Exchange - 75GB

PS Swing Migration is great - have just used it and it saved me HOURS!
