much easier for the web hosting company to maintain the records. If you get
a dynamic name software on the SBS can update the IP for the A record for
server.dynamic_name.whatever, this DNS zone would be held by the dynamic DNS
provider.

The public zone records only need a one time change to handle this, add
server.dynamic_name.whatever as an MX entry and maybe remove the ISP's MX.
It's possible that the ISP may provide 'backup MX', or you could continue to
use the POP boxes as a 'sorrta backup MX', this requires the MX record for
the SBS IP to be higher priority than the ISP's MX and maintenance of the
POP boxes.

I would not expect the web hosting company to charge much, let alone any,
for the zone changes.
