Lots of options:
* use OMA
* use IMAP (preferably with SSL)
* use POP3 (also, preferably with SSL)
* use the new mobile sync features of Exchange 2003 SP2 + WM5 (if your phone is a WM5 device)
Right now, the first two are probably your best options.
You have to elect to enable OMA in the CEICW, but if you did that, then browsing to:
https://<web_dns_name_for_sbs>/oma or http://<web_dns_name_for_sbs>/oma
should request a logon and then show a minimalist mail client.
For IMAP, you need to enable and start the MS Exchange IMAP4 service, then start the IMAP Virtual Server, plus configure access to it from outside (TCP/143 for IMAP or TCP/993 for secure IMAP). You'll need to assign the SBS certificate to the IMAP VS if you want to use SSL.
