For her email, use Outlook RPC over HTTPS instead of OWA. Much better, and
just like being on the LAN, albeit a little slower.
If she uses mostly Word or Excel docs, you could just set her up to use
offline files. When she gets back onto the LAN, it will sync her files. VPN
is another way to go, but make sure antivirus is current on the laptop!
