Dual boot? Very bad idea. And there's no need for this. You should do an
upgrade.
If you need 'safekeeping' do a full backup of all your data, online Exchange
backups, etc., first - in fact, you could do an Acronis clone backup
(www.acronis.com) of the entire existing server to another box, or external
HD.
