Absolutely. Remember, though, the term "BDC" doesn't exist in AD - there are
only domain controllers, which are peers (with the exception of some special
roles which must be held by the SBS box). They should also either be
AD-integrated DNS servers or all point to the SBS box for DNS - and remember
you'll want WINS operational too, if browsing is important.

You will also need to create sites for each location and dedicate subnets to
each in Active Directory Sites & Services. I like using something like
172.16.1.0, 172.16.2.0, 172.16.3.0, etc. to keep things tidy.

Yes, you can specify the appropriate path (\\server2\profiles$\%username%)
in each user's ADUC properties.

I think things like this are really no different in SBS than in W2003/AD -
with the exception that you can't tranfer the FSMO roles to another DC. If
you've done this without SBS, you should be fine.

How are you going to handle backups?
Also, make sure you look carefully at your group policy decisions as you'll
likely need to assign some things to the sites in GPMC (location specific
policies, for reasons of folder redirection, etc)
Presuming you want all clients connecting to the SBS box for Exchange, make
sure you use OL2003 and cached mode.
