I think your best bet would be to follow the SBS backup_restore document -
restore the server with disk 1 (do not continue with SBS setup), set up your
partitions as before, service pack to the same as when the backup was taken,
and restore. Assuming you used SBS Backup, that is.
Once you go with an SBS install you are a new domain, and the workstations
are not part of it.
