That POP3 issue is a known problem. If you're not on SP1 see KB article 835734.
I ran into this back in May. Ended up with ~3000 messages flinging about (one of the recipients was also running SBS with the same problem.)

We had a nasty issue at work today when a user sent us a mail with several recipients, one of which was using the pop3 connector. Due to the rules it had been given, the message went through it ok, but was then sent out to the external (to it!) recipients multiple times. Aparently the original recipient never got the email, even though one of the directors got over 300 copies!
I advised the IT team at the external company to switch to using SMTP.
