I have observed this wierdness myself and there are no filters, sort, or other detail custom views that would prevent all subfolders from appearing. The dialog box is not scrolled, the folders just don't appear. All data is fine and valid in the shared folder, it's just that the subfolders are "missing" on some user's systems but this problem goes away if the user reboots two or three times. I've checked permissions, patches, antivirus, network load, you name it. If anyone has a suggestion or a doc pointing to a resolution, I would greatly appreciate it!
Lots of useful suggestions from Brandy. Here's one which I didn't see among them: check whether the workstation is set to use offline files (in Explorer's folder options). A minor network delay can cause Windows to decide it has failed, and switch to offline working. Only recently accessed folders are visible. Offline files are only really useful for laptops.
For extra flakiness, combine offline files with wireless networking using the Zero Configuration service. You're right, that's the voice of experience speaking... .
