I have several questions in your original post, please see:

1. You mentioned "uninstalling & reinstalling IIS", I need to know how did
you reinstall IIS? Did you follow any article or document?

2. After you reinstall IIS, Exchange and SharePoint, have you reinstall SBS
SP1 again?

3. Also, how did you know "I've lost RWW"? Do you mean:

a. You cannot open RWW front page. OR

b. You can open RWW front page, but cannot log in. OR

c. You cannot find the VD under Internet Information Services\Web
Sites\Default Web Site\Remote.
