I have been setting Up SBS servers lately with 2 sets of mirrored drives.

the Master Drive is an 80 gig drive I have partitined into a 30gig partition
for the OS and the 2nd partition I put
clientApps on . I also put customers software under client apps that is
needed to deploy to workstations.
One the master OS partition I follow the Pre installation enviroment and
have all of the SBS cd's copied to the server along
with MB driver cd.

The second set of drives I have nee installing vary from 120 gig to 200 gig
depending on customer rquirements.
It is here I put USer SHare Folders, Public, Fax Archive And Fax recieved.
Exchange Mail Store.. and Special SQL instances..
