If it was me,
Set them up on the network and get them to connect and update.
Then allow and create a VPN on the laptop so they can access the fileserver
from the internet.
For exchange users, utilise RPC over HTTP connections for Outlook and away
you go!
Make sure that there is some sort of roaming AV solution, Symantec Corp
allows this.
