Thanks for your updating.
As I know, there are no such logs just logging failed incoming emails
addressed to non existent recipients.
As a workaround, you can forward mail with unresolved recipients to a
single mailbox. For detailed information, please refer to the following KB
article:

You can also configure the connection filtering and recipient filtering
features in Microsoft Exchange Server 2003, please refer to the following
