--The client computer is currently on the road, but at home he used the VPN
as well, and no other changes have been made. Since the server is housed
externally, VPN is used for all client computers. He can only send email
using OWA, which doesn't have all of his preferences, and he finds extremely
inadequate.

Yes we can use OWA just fine-however my client hates using it because he is
so limited in what he can do.

Just 1 user

Yes

The remote client is a member of the domain, but he generally does not use
the domain account to logon, and the VPN has always worked this way.

I've been trying to do this, but have one problem-the FQDN we use in IE is
the IP number. Therefore I've used that in the setup, but it has not seemed
to work. our external website is hosted by our ISP, so using our
www.companyname.com/remote does not access our server. The directions in
remote web do say use www.companyname.com, but I don't see how that could
work here.

Creating a new email profile is not a viable option-this is the boss's
computer, on which he has a few thousand clients, and cannot feasibly just
change his email address.
