I just thought the SBS server had a SP, I'm glad that has been clarified.
Anyway, I thought I'd give you an update on my current situation, I won't be able to install the SP for a little bit longer, they just keep putting it off, it might be another month before I'm given the go ahead :( I really want to get it over and done with, oh well, another item to put on the back burner.
Thanks for all your help by the way, I'll give you an update when I do actually install the SP

As for your scenario, I would like to suggest that you reinstall the related components again. This should simply resolve your issue. To do so:
1. Go to Control Panel, Add/Remove Programs, Select "Windows Small Business Server 2003" and select Change/Remove. This will enter into the Integrated Setup and the Component Selection screen. Select Networking and Exchange Server for "reinstall".
2. Install the Windows 2003 SP1, Exchange 2003 SP1 and SBS 2003 SP1 again.
3. Install the update 833992 again.
