Yes, Add user Wizard.

Under Server Management > Shares (local) > Configure My Documents
Redirection...first choice. Redirect all My Documents folders to the default
shared folder for users on the SBS. That was already set up before I started
working here.

I haven't tried to disable anything. Because I want the redirection to
happen. Just wasn't sure how to resolve the issue without making the users
Domain Power Users.

Yes, but they usually only use one workstation. A with computer A...B with
computer B...etc. I have one user that uses a different workstation 2 days a
week. They actually use a workstation in a different city and log on to our
Server using Terminal Services.

Yes, under Server Management I used the change permissions wizard. Click on
the user then change user permission.

Both users that are Domain Users are affected by this problem.
