Sorry I know this is a MS Forum but I've had 1st hand experience
LINUX is THE best choice IMHO ofcause!
There are LIVE installations available for Internet cafe -
my wife runs one with 20 stations
ALL Linux
I have also setup about 30 other Internet cafe's - same sort of setup.
Some of the PC's have Windows on too - for the die hards!!
the LIVE installation are good because they run completly from CD
Although we initially used LINDOWS (this can install on a BLANK Hard disk in
5 / 6 mins - FULLY functional.... the latest probably takes 10 mins but
installs OPEN OFFICE as standard.
www.linspire.com we now use Novell Linux Desktop almost all sites.

There are FREE Linux stuff out there but these are well supported and dead
easy.
Bit of a learning curve - (well to install you stick the disk in and answer
3-4 questions!!!) THAT'S IT.
With Linspire 10 mins later you have a Working system with Office (bit
longer with Novell dekstop)
Many sites just use a ROUTER and Swich (ie. NO server)
At some sites we also have Novell Linux server as these sites offer other
services.
We did look at SBS but didn't like the licensing and linux keeps people out
(better than Windows - a must when you can get just anyone off the streets
using you systems)
