That might be one of your issues.
I'm going to assume it's a RAID1 (Mirroring) setup. A pair of 120GB drives
for the OS, Exchange, and Applications is going to be pretty slow in my
experience.
You're better off with two arrays. One for the OS / Apps, and one for
Exchange, or even better, three.
