Remember Faxes have been around Forever. long before Microsoft.
and I'd imagine that when the TSID (Transmission Station identification)
Standard was made that 20 Characters seemed like enough

Remember it was only used on the top of outgoing pages
Not in the Automated Generated Front page from Microsoft Fax.

So Even if you edit those fields I doubt if it will get transmitted.
But you can try. and let us know..
