OK,
You can connect a second server to your network in the way you describe - I
would either set a Static IP on the new server and Exclude from DHCP or
Setup a Mac Address reservation for it - in either case its a server so it
should always have the same IP not keep moving around.
I would not suggest opening up ports on the router
Instead you can VPN into your network and access exactly the same way you
would if you were in the building itself.
You may have some issues with name resolution over the VPN so either connect
VIA IP rather than Machine name/Utilise Wins on the client connection
(assuming its on the Domain Server) or simply create a hosts file on your
client PC to resolve the name for you.
