Hello Robin,
The method you suggest would help as far as security is concerned - you do
not want these unknown users/computers to be able to access the server
directly.
You should also think about which protocols you want to allow via your
conference room users.
You can use a simple router/firewall (cost up to you - more you pay more
features) between the Conference room users and the adsl router obviously
they can also be on a different LAN IP subnet as well to further remove them
from your corporate network.
